Coconuts and Cashews, John reports from Vietnam

After being very impressed with the coconut crop I have now moved on to checking cashew nuts but not without having some time to reflect on my visit to the coconut farms.And I am pleased to admit I was very impressed with the way coconuts are grown here. The land where the trees grow is divided up into family owned units so that each family benefits from growing the crop. They also work hard on intercropping, so fruits like lime, bananas, and grapefruit are also grown in the same area.
Much to my surprise the drainage ditches seem to be inhabited by freshwater shrimps, all of which must benefit the local diet.
I think I confused my hosts though, I keep tropical fish it home and kept staring intently into the water to see if there was anything exotic lurking there rather than looking up at the coconuts in the trees!
I have to go and look at some more cashews now and will report back later.

The recipes are really topical - there are some lovely winter warmers that are perfect for Halloween and Christmas! Great website, well done.
The photo with this article makes my mouth water. I think cashew nuts make a real difference and are such a tasty luxury.
