Pumpkin, shallot and goats cheese quiche

Pumpkin, shallot and goats cheese quiche.
Prep time, less than 30 minutes. Cooking time 40-45 minutes
Ingredients
4 tbsp olive oil
350g/12oz shallots, peeled
675g/1 lb pumpkin or butternut squash flesh, cut into strips or cubes
2 garlic cloves
1 tbs balsamic vinegar
3 eggs
290ml/1/2 pint milk
100g/4oz cheese, either feta or goats cheese
2 tbsp grated parmesan
300g/12oz shortcrust pastry

Method
Heat the oven to 200C/fan 180C/gas 6 Line a 25cm flan dish with the pastry, place in the fridge to chill for 20 minutes. Place the pumpkin in an ovenproof dish, add two tablespoons of olive oil, stir until the pumpkin is covered with oil and then place in the oven for approx 30 minutes or until the edges of the pumpkin are beginning to brown and the flesh is soft. Meanwhile heat the oil in a pan and add the shallots and garlic, allow to brown slightly then add the balsamic vinegar. Cover and cook on a low heat stirring occasionally until the shallots have become caramelised. Remove the pastry from the fridge lightly prick the base of the tart with a fork, line the tart case with a large circle of greaseproof paper or foil, then fill with baking beans. Blind-bake the tart for 20 minutes, remove the paper and beans, then continue to cook for 5-10 minutes until biscuit brown. Beat the eggs and milk together and add salt and pepper to taste. Scatter the pumpkin and shallots over the base of the flan tin, then scatter the cheese, broken into chunks, pour over the milk and egg mixture. Place in the oven for 40-45 minutes or until set and golden brown in colour.
