Picnic Rolls

These enriched picnic rolls have a lovely nutty flavour from the Raisin and Hazelnut Frusli Bars, they go very well with cheeses and cold meats. Makes 12 rolls
Prep time: 20 mins, plus rising time
Cook time: 10 – 12 mins
3 bars Jordans Raisin and Hazelnut Frusli Bars
600g strong white flour
50g wholemeal flour
1 tspn salt
40g butter
1 sachet active yeast
250ml warm milk
Milk for brushing
1. Chop the Frusli bars quite finely. Put the flours and salt in a large bowl, and rub in the butter with the tips of your fingers, until the texture is like breadcrumbs. Stir in the yeast, and then stir in the warm milk. Lastly, fold in the chopped Frusli Bars.
2. Transfer the dough to a floured board and knead well until you feel the dough smoothing out, and becoming more even textured.
3. Clean the bowl and return the dough to the bowl. Cover with a clean damp teatowel, and put in a warm place to rise until doubled in size. This could be a sunny windowsill, airing cupboard, or an oven that is barely on.
4. Preheat the oven to 200 C/ 180 C fan/ Mk 5. Divide the dough into 12 and roll into rough balls. Set on a baking sheet and cover again with a clean damp teatowel. Set aside to rise in a warm place for 30 minutes or so. Brush with a little milk and bake for 12 – 15 minutes, until well risen and golden. Serve warm or cold with butter and cheese.
