Mulled Wine Biscuits
These little biscuits are perfect to have with a glass of warm mulled wine, sloe gin or damson wine on a cold day. They are a lighter alternative to chocolates too.
100g Jordans Natural Muesli
3 egg whites
200g icing sugar, sifted
50g ground almonds
Finely grated zest of 1 orange
½ tsp ground cinnamon
30g plain flour
1. Preheat the oven to 170 C fan/ 180 C/ Mk 5. Line a baking sheet with nonstick baking parchment.
2. Beat the egg whites until softly stiff, and fold in the icing sugar, ground almonds, grated orange zest and cinnamon. Lastly, fold in the flour and muesli.
3. Drop teaspoons of the mix onto the lined baking sheet, and bake in the oven for 15 minutes, or until golden brown. Serve with warmed mulled wine and plenty of guests.

I am sorry that Barbara has had a disappointing result with the Mulled Wine Biscuits. They are very delicious. There is nothing that is very tricky about the recipe, but my advice would be: - The egg whites are really just for holding everything together, and for that reason they are whisked until they are just stiff enough. To measure 'Softly stiff', lift the whisk and if the peak does not stick straight up, and bends soflty over at the top, stop whisking. If the egg whites are whisked more than this there is a danger that the biscuits will be dry and meringuey. - Ensure that the oven is correct temperature, if you use a fan oven set it to 170 C, and 180 C for a conventional oven. - The flour will also ensure that the biscuits do not become meringuey, so make sure that the flour measure is correct.

Have just made my second batch using medium egg whites this time and a little more muesli. They still do not look like the ones in the picture and are very meringuey. Am I doing something wrong!!
