Muesli Bread

With the evenings drawing in we thought it was time to get some hearty meals and tea time treats created for you. So we asked the lovely cookery queen Cara Hobday what winter warming recipes she could dream up using our muesli, feast your eyes on the results below. We will be putting more recipes onto the site in December so keep coming back for more.


We have been thrilled with the number of people who have left comments about our recipes and when Linda Read e mailed to say she used our Organic Muesli to make her favourite muesli bread we wanted to know more. Linda’s husband is the genius behind this lovely recipe, perfect served warm with a piping hot cup of tea after a chilly winter walk. Organic Muesli Bread
Makes 2 small loaves, or 1 large one

Prep time: 15 mins, plus 2 hours proving time
Cook time: 30 - 40 mins
 
400g organic strong white bread flour
300ml warm water
1 tspn salt
1 tspn sugar
1 tbspn rapeseed or sunflower oil
100 g Jordan’s Organic muesli with vine fruits, nuts and seeds
20 g fresh yeast/ 1 tbsp active dried yeast/ 1 sachet easy bake yeast

1. Mix the yeast, sugar and water in a jug, and set aside for 10 minutes. Mix the flour, Muesli and salt in the mixing bowl. Pour the yeast liquid into the middle of the flour mixture and add the oil. Mix together, and then knead the mixture to a firm dough. You can adjust the texture by adding more flour or water if needed.
2. Transfer to a floured board or large bowl, cover with a damp tea towel and leave in a warm place to double in size for about an hour.
3. Mix it firmly again and divide in half. Shape each half into a round or oval loaf or a shape that you prefer, and place on an oiled baking tray.
4. Cover with a damp teatowel again, leave in a warm place, and allow to double in size again for about 45 minutes.
5. Meanwhile, pre heat the oven for 20 minutes to 220ºC or 200ºC in a fan oven. Bake your Muesli loaves for about 30-40 minutes. If they start looking too brown on top then turn your oven down to 200ºC (180ºC fan oven)
Bread is cooked properly if it sounds hollow when tapped underneath. Remove from the oven and place on a rack.

    I absolutely love museli and I can't wait to make this bread, thank you so much for the recipe! I am picturing a slice warm, toasted and generously buttered, perfect for a lazy brekky at the weekend! Also, I fancy a banana and honey sandwich with it too!! Has anyone else got any mouthwatering ideas?

    I added 1cup supreme muesli to my sourdough starter pancake recipe, and it gave a lovely crunch, lots of fibre, extra fruity flavor to them. Instead of syrup, I spread a lovely fruit jam on them and it was a nutritious breakfast on the go. They can be frozen and popped in the toaster to heat the morning you want to use them!!!!

    I have had a query over whether this recipe can be cooked in a bread maker. I am going to contact Linda Reed who is the creator of the recipe and ask her, I will post something back here when I find out.
