Fruity Frusli Cheesecake

Setting time: 4 hours
4 Jordans Wild Berry Frusli Bars
100g butter, melted
40g digestive biscuits
300g cream cheese
200g half fat crème fraiche
60g icing sugar, sifted
1 tspn vanilla paste
3 leaves gelatine, soaked in cold water
2 peaches, stoned and finely sliced
150g strawberries, washed and halved
1. Line a 23cm/ 9 inch springform tin with baking parchment. Chop the Jordans Frusli Bars and mix with the melted butter and digestive biscuits. Press this into the base of the lined tin. Refrigerate while you prepare the topping.
2. Beat the cream cheese and crème fraiche together well, and stir in the icing sugar and vanilla paste. Squeeze out the gelatine leaves and put in a small pan with 100ml water. Simmer over low heat until the gelatine has dissolved. Whisk well and pour on to the cream cheese mixture. Mix until well blended.
3. Spoon the cream cheese mixture onto the biscuit base. Smooth out the top, and refrigerate until set.
4. To serve, arrange the peaches and strawberries over the top of the cheesecake. Store in the refrigerator for up to 5 days.
